Follow these guidelines for heated display cases:

Ensure that heated display cases are capable of maintaining a product
temperature of 140F (60C) or above.
DO NOT use heated display cases to bring the product temperature up to the
required holding temperature.
Make sure that food is heated to at least 145F (60C) for 15 seconds before
you place it into the display case.
Check the product temperatures of foods frequently during display.
Prohibit wet display.
NOTE: "Wet storage" or "wet display" refers to the storage of food or food
packages in water or in direct contact with undrained ice.
