As a food service officer, you must be knowledgeable of the requirements for the

sanitary quality of the following food items:
Canned food.
Fluid milk and fluid milk products.
Dry milk and dry milk products.
Milk and milk products that are used for drinking.
Milk that is sold in individual containers.
Milk that is sold in self-dispensing containers.
Milk that is sold in disposable containers.
Shellfish.
You must also obtain all food, including ice, from approved sources. Consult AR
40-657 (Veterinary Food Inspection) for approved sources.
Follow these guidelines when using canned foods:
Canned food
DO NOT use food in hermetically sealed containers that you have not
obtained from an approved source. For example, DO NOT use home-canned
foods.
Obtain the approval of the installation medical authority (IMA) to serve any
canned food that is abnormal in color, taste, or appearance.
Obtain the IMA's approval to serve any canned food in containers that show
bulging ends, swelling, leakage, or other abnormalities.
Destroy food that the IMA declares unfit for human consumption or dispose
of it per AR 40-657 and DOD 4160.21-M (Defense Disposal Manual).
Use or serve only pasteurized fluid milk and fluid milk products from approved

sources. Ensure that manufactured milk products meet applicable federal quality
standards.
